Exploring Common Ingredients for Baking

INTRO TO LESSON: This is the first lesson to a baking unit in an introductory culinary course.  Start lesson with the Ingredients and their Functions PP and noteguide for students to follow along with. Students learn about the basic ingredients that they will bake with this unit.  Then, students will experiment with each ingredient with 2 cookie experiments.   I use a chocolate chip cookie recipe because this is a recipe that most students are very familiar with.  Most have made homemade cookies before, or at least have eaten them to know what they should taste and look like.
